Last Tuesday my husband, Chris; myself; my brother-in-law, Tim; and his girlfriend, Jess; all returned from a blissful vacation in Cabo. When I say vacation, this was the vacation to end all vacations. We had 7 glorious days of doing absolutely nothing. When you have two young children that are constantly needing care and carting around as well as a husband who travels about once every 6 weeks, 7 day of doing nothing is heaven. And when I say nothing, I mean nada. We ate, drank and swam in the pool. Wash, rinse and repeat and you have our agenda for 7 days. Did I mention that this had to be what heaven is like?
We stayed at the Pueblo Bonita Montecristo Estates and had a whole house to our selves. This included daily maid and pool service for our personal pool and jacuzzi. We also decided to upgrade to the all inclusive package so there was no cooking for this momma. See, I’m telling you. I thought I had died and gone to heaven. Seriously!
Every meal was beyond wonderful and delicious. The service was impeccable and we never left the table unsatisfied. I really learned to love authentic Mexican food. The ingredients were so fresh and light. I hear people from California and Texas talk about missing authentic Mexican and now I know what they are talking about.
I really think I left a little bit of my heart in Mexico. The 4 of us are hoping to go back in a couple of years. I am just counting down the days ’til I feel the warm breezes on my skin and watch the cruise ships come in to dock. Besides, we have to go back so next time I can ride a camel. Oh, yes, camel rides are on my bucket list.
